Banana muffins

Makes 12 Muffins or A Bundt Cake

 

Ingredients:

  • 3 large bananas
  • 3/4 cup sugar (or erythritol for a low-sugar alternative)
  • 1 egg
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups all-purpose flour
  • 1/3 cup 701 Baking Oil (avocado oil)

Optional:

  • 1/2 cup chocolate chips and/or walnuts

Instructions:

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease or line a large muffin pan.
  2. In a large bowl, mash up the bananas.
  3. Add sugar (or erythritol for a low-sugar alternative) and a slightly beaten egg to the mashed bananas. Mix well.
  4. Add avocado oil to the banana mixture and mix until well combined.
  5. In a separate bowl, combine baking soda, baking powder, salt, and flour.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. If desired, fold in chocolate chips and/or walnuts.
  8. Spoon the batter into the prepared muffin pan, filling each cup about 2/3 full.
  9. Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  10. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Optional Banana Cake Variation:

  • Instead of using a muffin pan, you can also make this as a banana cake using a Bundt pan. Bake for an extra 5-10 minutes or until a toothpick comes out clean.
