Chocolate Coconut Squares

 Ingredients: 

  • 100g shredded unsweetened coconut 
  • 50g hemp hearts 
  • 50g flax meal 
  • 130g whey protein (vanilla) 
  • 160g coconut milk 
  • 130g dark molding chocolate 

Instructions: 

  1. In a double boiler, melt the dark molding chocolate until smooth. 
  2. In a separate bowl, mix the whey protein into the coconut milk until smooth. 
  3. Add the shredded unsweetened coconut, hemp hearts, and flax meal to the coconut milk mixture. Mix thoroughly until well combined. 
  4. Pour the melted chocolate into the mixture and stir until all ingredients are completely coated in chocolate. 
  5. Prepare a silicone baking pan (9x9 inches) with high walls. 
  6. Transfer the chocolate-coconut mixture into the silicone baking pan, spreading it out evenly. 
  7. Place the baking pan in the freezer for 10 to 15 minutes to allow the chocolate to set. 
  8. Once set, remove the pan from the freezer and cut the block into 25 squares. 
  9. Store the chocolate coconut squares in an airtight container in the refrigerator until ready to serve.
