Hazelnut Spread

 

Ingredients: 

  • 220g hazelnuts 
  • 1 tablespoon MCT oil 
  • 0.5 teaspoon salt 
  • 24g erythritol 
  • 1 tablespoon maple syrup 
  • 15g whey protein 
  • 3 teaspoons cocoa powder 

Instructions: 

  1. Preheat your oven to 350°F (175°C). 
  2. Place the 220g of hazelnuts on a baking sheet and toast them in the preheated oven for 10 to 15 minutes until slightly toasted. This enhances the flavor of the hazelnuts. 
  3. Remove the hazelnuts from the oven and let them cool for a bit. Once cooled, rub them between your hands to remove loose skins. This step helps in achieving a smoother texture for your spread. 
  4. In a food processor, combine the toasted hazelnuts, 1 tablespoon MCT oil, 0.5 teaspoon salt, 24g erythritol, 1 tablespoon maple syrup, 15g whey protein, and 3 teaspoons cocoa powder. 
  5. Process the ingredients for about 2 minutes. It will start as a crumbly mixture. 
  6. Scrape down the sides and bottom of the food processor and continue processing. Be patient as it will take some time for the mixture to transform from crumbly to a paste. 
  7. Once you notice the oils starting to come out, and the mixture reaches a spreadable consistency, you can stop processing. 
  8. Transfer into a container for storage and now you have a delicious hazel nut spread.
