Ingredients:
- 260g peanuts (with skins for preference)
- 1 tablespoon MCT oil
- 0.5 teaspoon salt
- 20g flaxseed or flaxseed meal
- 40g hemp hearts
- 10g erythritol
- 65g vanilla whey protein powder
- 250g dark molding chocolate
Instructions:
- In a food processor, combine peanuts, MCT oil, salt, flaxseed, hemp hearts, erythritol, and vanilla whey protein powder.
- Process for several minutes, stopping to scrape down the sides and bottom until the mixture becomes smooth like peanut butter and the oils start to release.
- Melt the dark molding chocolate in a double boiler or a pot with a bowl.
- Use a 4.5-inch rectangular silicone mold for granola bars. Spoon melted chocolate into each bar, coating the walls and bottom of the molds. Place in the freezer for 5 minutes to set the chocolate.
- After the chocolate has set, spoon in the peanut butter filling.
- Top off each bar with more melted chocolate to seal them.
- Place the filled mold back in the freezer to set the chocolate.
- Once the chocolate is fully set, remove the bars from the mold and place them in an airtight container for storage.
